A summary of the violations found during the inspection are listed below.

511   Cold holding equipment is able to maintain a temperature of 4 degrees C. or lower (Sec 19(1)(b))
Observation: The inside of the line cooler has been repaired so that it can maintain food at 4C, however the line inserts can not achieve 4C.
Corrective Action: Permission is given to use the inside of this cooler for food storage and to allow 3 inserts of cut vegatables to be used provided that the inserts are turned over every 2 hours using a controlled method - labelling each insert with the time it was pulled from the cooler. This is an acceptable method provided it is limited in scope (3 inserts) and used as an interim measure until adequate cooling can be provided for this kitchen.

Contact this office for re-inspection once a solution has been provided to increase cooling capacity. Ensure that the performance of this cooler is diligently monitored daily and that corrective action is taken if it cannot maintain food at 4C as required.
