Observation: Second warning - No sanitizer available on site for warewashing or for wiping down any surfaces
Corrective Action: Staff bought sanitizer from the store to use at the premises within 2 hours. Ensure that all staff are trained to wash dishes using the 3 compartment sink method which includes a sanitizer step. Any further violation from inadeqaute dishwashing will result in ticketing.
705   Written actions to be followed up when critical limits are not met (Sec 23 (3)(d))
Observation: Cooked pizza stored at room temperature. The hot holding unit is never turned on at this location. Staff indicated that pizza must be discarded every 1.5hours but there is no system in place to make sure that the pizza does not sit out for too long. Staff claimed that pizza has not been sitting out for more than 2 hours but there is no way to prove it or keep track of holding times.
Corrective Action: Implement a system that ensures that old pizza is discarded and also proves that pizza is not temperature abused, for example: 1. set some timers for 2 hours when the pizza is displayed and discard it when the timer beeps. 2. buy small stickers to put on the pizza pans with the time that they should be discarded. Alternatively, buy a hot case that can store all the pizza displayed and is capable of keeping pizza at 60C/140F. Any pizza that can not be shown to be stored safely will be discarded in future inspections.
