Comments:

Initial inspection conducted of new food service establishment. The following observations were made:
1. Both owners have completed Foodsafe Level 1 - foodsafe certificates provided.
2. Thermometers noted in all coolers - begin keeping a temperature log for all coolers.
3. Ensure that all coolers used to store potentially hazardous foods are maintained at 4C or less at all times. Two of the coolers will need their temperature adjusted to meet this requirement.
4. Ventilation system will be due for servicing on July 29, 2011.
5. Ensure that sanitizing solutions are provided at all work stations in labeled spray bottles. Concentration must be 100ppm chlorine or 200ppm quat. Test strips must also be available for checking concentrations.
6. High temperature dishwasher measured 65.7C during the final rinse cycle. The minimum final rinse temperature required is 71C measured at the plate. Operator agreed to use do a manual sanitizing step using the dishwashing pot sink in 100ppm chlorine for 2 minutes following the wash cycle. This is a short term solution only. A follow-up inspection will be conducted on July 6th to verify that the unit has been repaired or replaced.
7. A shatterproof light cover is required in the dish washing area.

The following documents have been supplied by the operator: Application form, menu, food safety plan, sanitation plan, equipment list, foodsafe certificates, business plan and floor plans.

Regarding Pest Control: signs of pest activity were noted under the equipment and along walls. It was not clear if the signs were due to recent or past activity. Facility will require a thorough cleaning and sanitizing under all equipment to remove food debris and grease. All potential entrance points for pests along walls, floors and baseboards must be sealed. A pest control contract is not required at this time, but it is strongly recommended. Food must all be stored in pest proof containers with tight fitting lids. Frequent monitoring for pest activity should form part of the routine cleaning and sanitation plan and should activity be noted, a pest control operator should be contacted immediately.

Regarding parking lot storage area: There is 1 freezer currently in use which measured -19C. The tape must be removed from the handle. Pest activity was noted on the shelves. Ensure that all items are inspected for rodent activity, damage or droppings and discarded accordingly. Only dry storage of sealed items or cold storage in cooler/freezer is permitted downstairs and food must be in pest proof containers. Potential nesting materials must also be stored in pest proof containers.

A permit is issued effective June 21, 2011. A follow-up inspection will be conducted on July 6th, 2011.
