Observation: No chlorine dishwasher sanitizer.
Corrective Action: Required: 1. Fix machine to produce >50 ppm chlorine sanitizer. 2. Sanitize dishware manually in sink with rinse of 50 ppm chlorine. 3. establish daily checks of sanitizer level in machine. Chlorine test strips must be available in the kitchen.

Observation: 2. Ceiling tile issue must be addressed. Washable ceiling tiles not installed.
Corrective Action: 2. Ceiling tiles. Operator( Irma Hohn) agreed to have them installed by 6 months. (Dec 31,09 deadline). Failure to comply by deadline may result in issuance of violation ticket.

Corrective Action: Required: 1. Clean under stove and prep. cooler.

Comments:

All coolers to standard.
Freezers < -18C.
Handwash facilities - adequate.
Log sheets for dishwasher supplied to operator.
Operator signed the inspection report.
