Observation: The ventilation hood had grease running from it and accumulation of fluff stuck to it.
Corrective Action: It should now and routinely be thoroughly cleaned.

Observation: Food was being stored on the floor of the walk-in fridge.
Corrective Action: To prevent risk of cross contamination from floor to food contact surface, food should not be stored on the floor.
116   Improper Construction / Maintenance of Establishment
Observation: There is a leak in the condensate drainage pipe from the freezer condenser.
Corrective Action: This is presently being captured by a tray located below it. This should now be repaired.

Observation: Prepared/thawed potentially hazardous foods were not day/date labeled.
Corrective Action: These food products should be day/date labeled for stock control and food status awareness.

Cleaning material were in unlabeled spray bottles, cleaning materials should now be clearly labeled.
