A summary of the violations found during the inspection are listed below.

105  Critical Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s)
Observation: The cooler next to the deep fryer was noted at 10C.
Corrective Action: Store all potentially hazardous foods at 4C or colder OR discard and rotate with fresh every 2 hours. Staff indicated that heat radiating from the deep fryers is believed to be causing the unit to malfunction. Possible solutions are currently being investigated. Avoid using this unit for anything except sauces that will be rotated every 2 hours (discard and replace with fresh) OR discontinue using completely until a permanent solution is found and the unit can maintain 4C or less at all times.
113   Repeat Improper Sanitary Facilities
Observation: No soap dispenser or paper towel dispenser in upstairs server station and no paper towel dispenser in upstairs bar.
Corrective Action: Install required items.
115   Inadequate Insect / Rodent Control
Observation: There is a notable fruit fly problem behind the bar.
Corrective Action: A combination of factors is likely contributing to this problem including excess moisture accumulation around the glass washer causing decay of wood shelves etc and areas under and inside the bar that are difficult to reach for routine cleaning. Plans for redesigning this area to allow more thorough cleaning should be developed at the earliest available opportunity. In the mean time investigate short term measures for mitigating the fruit fly problem including foam drain cleaners, enhanced cleaning under the bar etc.

Comments:

Items corrected from April 21, 2010 report:
1. Seals and caulking replaced as requested.
2. Hooks installed for mops.
3. New ceiling tiles, new stainless counter top under turbo chef and new shelving in walk-in cooler.
4. Paper towel dispenser by smokers now operational.

Outstanding items from previous report:
1. See comments above re: upstairs server station and upstairs bar hand washing facilities.

General Observations:
1. All temperatures met regulatory requirements (except small cooler next to fryers (see comments above).
2. Thermometers noted in all coolers.
3. Temperature logs were generally up-to-date (a few days missing from January).
4. Food storage acceptable - dry storage clean and organized, no signs of pests; walk-in cooler organized with all foods covered and dated; no concerns in walk-in freezer.
5. Dishwasher tested 71C at plate during final rinse cycle using thermo-label.
6. Quat sanitizing solution tested 200ppm.
7. Ventilation recently serviced - next service due June 2011.
8. Food handling observed during inspection - no concerns noted.
9. Hand-washing station supplied with soap/paper towel (see comments above re: upstairs bar and server station).
10. No signs of pests.
