Observation: All potentially hazardous foods are not stored under refrigeration (4ºC / 40ºF or less ).
Corrective Action: Cold line insert temps exceed 40 degrees F. in at least one unit. Ensure food rotated within 2 hours or discard. Unit must be repaired or upgraded.
108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Sanitizing rinse for dishwashing not at proper temperature (82ºC /180ºF).
Corrective Action: Dishwasher serviced morning of inspection; needs further investigation. Temperature gauges indicate temperature is adequate.
116   Improper Construction / Maintenance of Establishment
Observation: Some surfaces (walls, counters) worn in room service/serving area.
Corrective Action: Proceed with plans to replace wall tiles with stainless wallboard.
