Observation: The dry storage floor is need of cleaning.
Corrective Action: Please clean the dry storage floor more frequently. Keep all the food containers on the shelves to make it easier to clean.

Observation: Dry food bags being stored on the floor in the dry food storage room.
Corrective Action: All food containers must be stored minimum 6 inches above the floor.

Discussed the results of this inspection with Willy, the Chef.
In compliance items:
-All refrigerators are running at below 4 degree Celsius.
-Hot holding unit .60 degree Celsius.
-Freezers running below -18 degree Celsius.
-Temperature logs and sanitation logs being maintained.
- Mechanical dishwasher providing > 50 ppm chlorine in the rinse cycle.
- Foodsafe certified handlers available.
-Quat sanitizer available in the spray bottles to sanitize the food contact surfaces.
-Hand washing facilities are satisfactory.
- No signs of any pest infestation observed.
-Food handling practices appears to be satisfactory.
