Observation: Soup packets being thawed at the room temperature.
Corrective Action: Food should be thawed in the fridge or under cold running water.

Comments:

In compliance items:
1. The dishwasher rinse temperature is more than 71 Degree Celsius on the dishes.
2. Temperature logs are being maintained. All equipment temperatures are meeting health requirements.
3. Meeting regulatory requirements for Food safe trained persons.
4. All the fridges are equipped with the thermometer.
5.The hand washing stations equipped with soap and paper towel.
6. Washrooms well maintained, equipped with soap and paper towel.
7. No visible signs of any pest infestation.
8. Sanitizer spray bottles have more than 100 ppm bleach in it.
9. The facility in compliance with the Health Impediment Regulation for maximum allowable trans fat content. The operator to maintain the nutritional information documents for the frozen soups and/or any other items for which the original container is destroyed.

Recommendations:
The upper section of the line cooler was running slightly warmer than 4 degree Celsius at the time of this inspection. The temperature records however indicates that this portion is consistently maintaining less than 4 Degree Celsius temperature. The operator is advised to monitor the internal food temperature in the inserts to ensure that this portion is able to maintain less than 5 Degree Celsius temperature. A thermostat adjustment may be required to ensure that the refrigeration temperatures are maintained during busy periods. Similarly, The temperature of the small milk fridge should be monitored more frequently and the thermostat be adjusted to compensate for the frequent opening/closing of the fridge.
