Observation: Back-up fridge unplugged from mains electricity overnight, food at room temperature.

Corrective Action: Cartons should be stored at +4C or less at all times.

Corrective Action: Food should not be stored on the floor and timber shelving should be sealed/replaced leaving smooth, impermeable and cleanable surfaces.

Corrective Action: Opened dry foods should be stored in food grade containers with fitted lids.

Observation: Food is being stored in the viewing gallery in wooden cupboards that are in disrepair.
Corrective Action: Food should not be stored where it can be tampered with but in approved food rooms and secured. Food should not be stored in this area.

Corrective Action: Readily available sanitizer in spray bottles and for maintaining wiping clothes when not in use should be provided and monitored routinely in line with good HACCP practices.
