Observation: Glasswasher detergent and sanitizer pumps are broken.
Corrective Action: Repair the glass washer as soon as possible. As an interim measure - use disposable cups, and during slow periods, manuallly add detergent to the glasswasher run the glasses through, and then immerse in a sanitizer dip bucket afterwards and then dry.
117   Food Handler Training
Observation: There is not effective communication of glasswasher problems between staff and management/ownership.
Corrective Action: Ensure that all staff are trained in the proper operation of the glasswasher and that they complete a glasswasher checklist daily to identify any problems with the unit as they occur so that they are addressed immediately.
