A summary of the violations found during the inspection are listed below.

511   Cold holding equipment is able to maintain a temperature of 4 degrees C. or lower (Sec 19(1)(b))
Observation: The outstanding issue continues to be the 2 prep refrigeration units: neither of them are capable of maintaining food temperatures at or below 4C during service. A contributing factor to the temperature problems is that none of the drawers provide a tight seal when they are closed and the lid that covers the inserts does not have a rubber seal at all.
Corrective Action: Whilst staff are diligently implementing a 2 hour rotation and not storing any food in these units when the facility is closed, this system cannot be a long term solution. Potentially hazardous foods must be stored at 4C or less and cold holding units must be capable of maintaining temperatures at or below 4C. Failure to have this issue addressed will result in enforcement action.

Comments:

Follow-up inspection conducted to verify outstanding items from April 10 report and to discuss future plans for refrigeration.

The following items have been addressed:
1. New light covers are being installed.
2. The pass between the kitchen and the bar was repaired.
3. The glass washer has been repaired.

It is understood that Ric's Grill has plans to upgrade the HVAC which will improve air circulation within the kitchen.
It is also understood that one option presently being considered is to install remote compressors for the refrigeration units.
