Observation: Several prep coolers are not maintaining temperature below 4 degrees Celsius; coolers were frequently being opened at the time of inspection.
Corrective Action: All coolers must be monitored and temperatures recorded twice daily to ensure they are maintaining temperature below 4 degrees Celsius (temp logs provided). Prep coolers should be adjusted to allow for temperature to be maintained during regular use.
116   Improper Construction / Maintenance of Establishment
Observation: Lighting in the walk-in cooler is not sufficient (dark in the back of cooler).
Corrective Action: Light bulb must be replaced.

Comments:

Items that have improved/been corrected since the previous inspection (January 26/07):
The Quat sanitizer dispenser has been service; sanitizer concentration measured at 200 ppm.
General organization and cleanliness in the walk-in cooler and freezer has improved; freezer has been defrosted.
Floor tiles have been replaced in the downstairs prep area.
Organization in the dry storage area has improved; ensure that all products stored in this area are shelf stable.
