Observation: The final rinse temperature of the pot wash was noted at +65.7C and the dish wash was noted at +58.5C.
Corrective Action: These should now be repaired to ensure a minimum temperature of +71C at the plate.

Observation: The underside of the soft drinks heat exchanger located within the ice sink was dirty.
Corrective Action: The ice sink and associated parts should be thoroughly cleaned after each session.

Observation: Sanitizer hand spay bottles had zero concentration of sanitizer in them.
Corrective Action: Sanitizer concentrations should be monitored routinely.

Observation: Cleaning beneath some kitchen work equipment was in need of cleaning.
Corrective Action: Areas beneath work equipment and in the more difficult to reach kitchen areas should now and routinely be thoroughly cleaned.

Observation: One of the reach-in deli refrigerators had water pooling at the bottom.
Corrective Action: To prevent risk of cross contamination, this should now be repaired.

Observation: Within the walk-in coolers/freezers there are some light fitting tubes not working. There is another that has a missing protective cover and another with a damaged protective cover.
Corrective Action: All the light fittings within the walk-in equipment should now be assessed and repaired leaving in good working order to facilitate cleaning and working activities.

Observation: The walk-in pastry freezer door is not sealing properly giving rise to icing and frosting around the door seal.
Corrective Action: The icing should now be removed and the door seal repaired.

Observation: The steamer has a leak in one of the water supply pipes causing wetness to the surrounding floor area.
Corrective Action: This should now be repaired to facilitate cleaning and work activities.

Corrective Action: This fridge should now be cleaned and the leak repaired.
