110   Food Not Protected - General
Observation: Observed buckets of cooking sauce (covered) being stored underneath the raw meat shelf in the walk in cooler. Some food containers being stored on the floor in the walk in cooler.
Corrective Action: To eliminate the possibility of accidental contamination, no food item should be stored underneath the raw meat shelf. Do not store any food containers on the floor.
110   Repeat Food Not Protected - General
Observation: The ice scoop being stored inside the ice machine. The scoop holder on the wall is broken.
Corrective Action: The ice scoop should be stored in a clean container and must be regularly run through the dishwasher.
113   Improper Sanitary Facilities
Observation: The front bar hand washing station does not have hot running water. Hot running water otherwise available in the restaurant.
Corrective Action: The reason for the lack of hot water must be investigated and the required corrective action be taken. Target completion date - 1 week from the date of this inspection.

Comments:

In compliance items:

1. All refrigeration temperatures are below 4 Degree Celsius.
2. All freezing temperatures are below -18 Degree Celsius.
3. Temperature logs are being maintained.
4. The dishwasher is sanitizing at more than 50 ppm chlorine in the rinse cycle.
5. The sanitizer spray bottles have more than 200 ppm quat concentration.
6. Sanitizer concentrations in the dishwasher and the sanitizer spray bottles are being monitored.
7. Foodsafe certified food handler available on site. As per information provided by the employee, 12 out of 15 food handlers are Foodsafe Level 1 certified.
8. Facility is in good general maintenance.
9. Hand washing stations are equipped with soap and paper towel.
10. All refrigeration units are equipped with thermometer.
