A summary of the violations found during the inspection are listed below.

115   Inadequate Insect / Rodent Control
Observation: Rodent droppings are still evident in the dry storage area; dropping have been cleaned up in the front area and no new droppings noted there.
Corrective Action: Rodent droppings must be cleaned up in the dry stores room (completed at time of inspection), monitor to ensure no new droppings appear as part of the regular pest control monitoring.
116   Improper Construction / Maintenance of Establishment
Observation: Water is pooling behind the cooking equipment (steam kettles); floor appears to be sloped away from the floor drain.
Corrective Action: Water must easily flow to the drains; push water to drain as required to maintain a clean & dry floor - repair floor as necessary to ensure better drainage.

Comments:

Inspection conducted to review critical violations noted on the previous report. Violations that have been addressed include:
105 - All refrigeration temperatures are satisfactory.
108 - Quat sanitizer buckets are in place for wiping clothes; ensure regular changing of the solution; warm water should be used to allow for proper monitoring of the concentration.

Maintenance items noted on the previous report that still require attention (completion was not expected given the short time frame between visits):
1. Sealing of dishwashing area to prevent water and spills from going behind dishwashing drain tables, area is becoming difficult to keep clean due to warn caulking and wall finishes (downstairs dishwashing area).
2. Hard-to-reach areas in the service lines (bakery area and drawers near the frier that are no longer in use and not in place) need to be addressed, these areas are prone to accumulation of dirt but are hard to clean. Consideration should be given to sealing off these areas.
3. Base boards are needed in the dry storage area to prevent accumulation of dirt in the floor/wall junctions.
