Observation: Temperature of kitchen prep table is still recording temperatures between 8C and 12C.
Corrective Action: Potentially hazardous foods must be stored in walk-in cooler or COKE upright fridge, until prep table refrigerator can be repaired. All potentially hazardous foods must be maintained at temperatures of 4C, or below. Ensure all refrigerators have thermometers (visible and accurate). Maintain daily temperature logs.
108  Critical Repeat Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Wiping cloths are not stored in approved sanitizing solution.
Corrective Action: Sanitizing solution (Chlorine 100ppm / QAC 200 ppm) with wiping cloths must be kept in a separate container, monitored with test strips and changed every 2 hours. Or clean, wiping cloths must be used in conjunction with sanitizing spray (100ppm chlorine or 200ppm QAC).

105. Temperature of walk-in cooler recorded between 1C and 3C = good.
Daily logs are being recorded and maintained for all refrigeration units.

110. Frozen meat is being thawed in refrigerator.
Foods in walk-in cooler are covered, to prevent possibility of contamination.
Ice scoop is stored in separate container, outside of ice machine.
Canned foods are transferred to food-grade containers once opened.
Ceiling lights have been covered with shatterproof coverings.

113. Staff washroom is provided with wall-mounted paper towel dispenser.
Wall-mounted liquid soap dispenser has been installed in front bar service area.

Updated Sanitation Plans and Foods Safety Plans have been submitted and approved.
