A summary of the violations found during the inspection are listed below.

Observation: Wooden blocks used to raise the glass washing machine in the back bar are not easily cleanable. Some other bare wood surfaces abound this area. The edges of the wooden counters in the kitchen are not finished.
Corrective Action: Provide a smooth and non absorbent finish on any bare wood surfaces. Finish the edges of the wooden counters to provide a smooth and easily cleanable surface. Provide a water proof paint or equivalent finish on the wooden counters.
116   Repeat Improper Construction / Maintenance of Establishment
Observation: Some indications of mould growth on the wall behind the glass washer in the back room. The back room walls is in general despair with lot of holes.
Corrective Action: Repair the damaged walls and provide a water proof finish ( FRP or equivalent on the walls in the back room).
402   Food is protected from contamination (Sec 12(b))
Observation: Drink bottles stored in the ice well.
Corrective Action: Do not store any cans or bottles in the ice intended for human consumption.
505  Critical Food premises maintained in a sanitary condition (Sec 17(1))
Observation: Standing water in the corner of the back room. As per information provided by the operator, the glass washer tank sometimes overflows flooding the back room. This is a reoccurring violation.
Corrective Action: Take appropriate corrective actions to stop the overflow of water. Remove the standing water and repair the damaged wall. Any future violations of similar kind may result in the EHO ordering to provide a floor drain in the back room.
505  Critical Food premises maintained in a sanitary condition (Sec 17(1))
Observation: The space underneath the counters on both the bars, and the space behind and underneath the back glass washer is not being cleaned. These areas are filthy and filled with broken glass, bottle caps and other debris.
Corrective Action: A daily cleaning schedule should be implemented for underneath the counters and other hard to reach areas. This is an ongoing violation.
507  Critical Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: Mechanical glass washer in the back room is not proving 12.5 ppm iodine in the rinse cycle.
Corrective Action: Repair the glass washer in the back room to provide minimum 12.5 ppm in the rinse side. Do not use this glass washer until repaired.
507  Critical Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: Mechanical glass washer on the front bar is not providing any detectable sanitizer. The sanitizer line of the glass washer found out of the sanitizer container. Iodine levels are not being monitored by the staff.
Corrective Action: Repair the glass washer to provide 12.5 ppm iodine in the rinse water. Do not use this glass washer until repaired. Provide iodine test kit to monitor sanitizer levels in the glass washers.
604   Adequate handwashing stations at convenient locations are available for employees (Sec 21 (4))
Observation: None of the bar sinks have paper towel available.
Corrective Action: Provide paper towel in a dispenser on both bar sinks.

Routine inspection.

In compliance items:
- Refrigeration temperatures are 4 degree Celsius or below.
- Freezer temperatures are -18 degree Celsius or below.
- High temperature dishwasher in the kitchen is reaching 71 degree Celsius on the dishes.
- Hand washing station in the kitchen has soap and paper towel.
- Sanitizer dispenser providing 200 ppm quat solution.
- Foodsafe certified food handlers available.

This facility is in need of an improved cleaning and maintenance schedule. The existing design and maintenance of the back room is a concern and and improvement plan is required to :
- Increase the general cleanability of the space behind the glass washer around the drains.
- Provide some acceptable means of drainage for the water over flow from the glass washer operation by providing a floor drain.
- to protect walls from the water damage (provide FRP or equivalent finish).

A follow up inspection required.
