Observation: Enhanced treatment of floor and sink drains is required. Designate staff to perform a proper shut-down procedure at the end of the work day to eliminate all fly breeding sites.
Corrective Action: The shut down procedure should include: 1. Pour high strength sanitizer down all of the floor drains and sink drains. 2. Completely cover all floor drains and plug all sink drains (the stand plugs with overflow guards should have a cover on the hole in the top). 3. Remove all garbage bags and turn all garbage cans upside down. 4. Remove the water condensate in the drain pan below the ice machine. 5. Ensure all dishes are washed and sanitized. 6. (optional) utilize fans in the bar, kitchen and dishwash area during the day to prevent flies from settling on surfaces.

Comments:

Items from March 20th order have been completed. The dishwasher area has been properly grouted and sealed. The dishwasher backsplash has been properly sealed and the stainless table has been sealed so that water does not pool on the floor. The dishwasher area was dry at the time of inspection after a lunch rush, demonstrating that the measures are effective at keeping the floor dry to eliminate breeding sites. Thank you for your attention to these items. Some additional work is now required as noted in item 803. Please ensure that the nightly shut down procedure is performed every day until the follow up inspection on May 1st.
