402  Critical Food is protected from contamination (Sec 12(b))
Observation: Large containers of soup and broth were observed out at room temperature. They were all measured to be above 60 degrees Celsius, but using such large containers will not allow for proper cooling of the soups and broths.
Corrective Action: Proper cooling procedures are 60 to 20 degrees Celsius in two hours and 20 to 4 degrees Celsius in 4 hours. In order to achieve this the operator must put soups or broths in sheet pans no more than two inches deep and then put these sheet pans in the refrigeration unit. Another option is to put the large containers of soup or broth in ice with an ice wand in the middle.

Comments:

Facility is clean, sanitary and well maintained.
Both the dishwasher and glassware washer are sanitizing properly.
Quats is used as the food contact surface sanitizer with a concentration of greater than 200 ppm.
Food storage practices are good.
Hand washing basis were accessible and well stocked with soap and paper towel.
