Observation: Baked potatoes cooled for extended periods at room temperature.
Corrective Action: Ensure that baked potatoes are cooled to refrigeration temperatures within 6 hours of cooking (requirements are 60C-20C in 2 hours, and a further 20C-4C in 4 hours).
116   Improper Construction / Maintenance of Establishment
Observation: Pop syrup spilled underneath the bar.
Corrective Action: Enhanced cleaning is required in this area as it may be an attractant to fruit flies. The use of a quat sanitizer on all surfaces below the bar as well as drain treatments will aid in this regard.

Premises is well maintained. Temperature logs are complete and up to date.
