Observation: Discussed the handling procedures for the mop bucket with the chef. He advised that the mop bucket is filled and emptied in the double sink in the dishwashing area.
Corrective Action: Do not use the double sink to empty the mop bucket. The janitorial sink in the employee change room must be used to fill and empty the mop bucket.Please note that if the practice of dumping the mop bucket in the kitchen continues in the future, the EHO can order to install a mop sink in a more convenient location in the facility. Please include mop bucket filling and emptying procedures into your written sanitation plan.
