Observation: Garlic butter, tomatoes, bacon, butter, and sauces are stored above 4 degrees without any time/temperature control.
Corrective Action: Store inserts at 4 degrees Celsius or below. Alternatively, foods can be taken out for service for 2 hours - ensure that food is portioned correctly and that there is a means to control this such as a log sheet (time that inserts are taken out), a timer system (with an alarm at 2 hours), or time labelling of foods (e.g."discard at 4pm")
116   Repeat Improper Construction / Maintenance of Establishment
Observation: Kitchen floor tiles are dirty, cooler compressor area is very dirty.
Corrective Action: Ensure that regular enhanced cleaning is conducted in this area.
