A summary of the violations found during the inspection are listed below.

Observation: Some further maintenance is required in the premises.
Corrective Action: Provide covers for the kitchen lights. Clean/repair/replace the dirty or damaged ceiling tiles. Refinish the damaged walls in the dry storage area and the kitchen. Fix the drawers to the line cooler within 4 weeks as per today's meeting - failure to correct this item will lead to further enforcment measures.
707   Procedures include cleaning and sanitizing requirements for the establishment (Sec 24 (2)(a))
Observation: A cleaning protocol must be completed and implemented in the facility that includes checklists or sign off sheets that designate jobs and the staff responsible.
Corrective Action: Implement a cleaning program and provide evidence that it is in use. Templates can be provided upon request.

Comments:

Reinspection for the above items to be conducted in 1 month. A meeting time will be arranged prior to the inspection. If there are complications preventing the completion of these items please contact this office.


Kitchen has undergone enhanced cleaning throughout the grill line and behind and underneath all equipment.

Items corrected from previous report:

505 - Food premises maintained in a sanitary condition (Sec 17(1))
Observation: There is a large build up of debris in the floor of the walk in freezer. The compressor is causing a build up of ice that is dripping onto food containers.
Correction: De-frost the freezer and remove the contamination on the floor and around the compressor fans.

Observation: The ice machine air intake on the front is caked with dirt.
Correction: Clean the front, sides and inside of the ice machine.

Observation: The wire storage rack next to the grill is dirty
Correction: Clean this wire storage rack.

Observation: The tiles in the walk in cooler have a build up of dirt/debris.
Correction: Provide enhances cleaning to the tiles in the walk in cooler.

Observation: Cardboard is used on the floor in the dish pit to soak up water/grease and it is saturated at the time of inspection.
Correction: Provide a cleanable rubber mat in the dish area so that staff can have a non slip work area and not resort to using old cardboard boxes.

Observation: There was no soap for the kitchen handsink at the beginning of the inspection. The paper towel dispenser does not work in the kitchen.
Correction: Soap was provided at the time of inspection. The paper towel dispenser still requires repair.

Correction: Provide soap and paper towels to the kitchen hand station.
