Corrective Action: All food must be protected from contamination, ensure separation of raw and ready-to-eat foods.

Observation: The glass door sushi cooler is > 4 C., all potentially hazardous food were discarded at the time of inspection.
Corrective Action: Do not use cooler until serviced and capable of maintaining food < 4 C.

Observation: Sanitizer in the spray bottles was 50 ppm (Quat).
Corrective Action: Ensure sanitizer is 200 ppm, concentration was 200 ppm at the dispenser.

Observation: Shelves in the walk-in cooler are very rusted.
Corrective Action: Shelves must be replaced or repainted.

Observation: There is no soap or paper towel in the staff washrooms.
Corrective Action: All handsinks must be supplied with soap and paper towel. Ensure handsinks are accessible at all times - do not use for food prep.

Observation: Lids of the chest freezers are cracked and/or have exposed insulation.
Corrective Action: Lids must be repaired or replaced.
