Observation: Sanitizing rinse for dishwashing not at proper temperature (82ºC /180ºF).
Corrective Action: Please be advised that this is a critical violation. Failing to address this issue may result in a violation ticket. Until the dishwasher is repaired, all the dishes must be sanitized manually in 100 ppm chlorine or 200 ppm quat solution.
