Observation: The milk jugs used in coffee sales areas were not being routinely thoroughly cleaned.
Corrective Action: Jugs should be routinely cleaned using a commercial grade dishwasher or using the approved manual dishwashing method.

Corrective Action: This equipment should now be replaced/sealed leaving a smooth and cleanable surface.

Corrective Action: To prevent risk of contamination from glass, glass products should be eliminated from food storage areas.

Observation: Ice scoops were not provided at each ice sink and ice making machine.
Corrective Action: Ice scoops, routinely cleaned and sanitized, should be provided at each ice sink and ice making machine, buckets, jugs and other utensils are not acceptable.

Observation: The various ice sinks were in need of detailed cleaning especially beneath the heat exchanger for the pop drinks.
Corrective Action: The ice sinks and exchangers should be thoroughly cleaned and sanitized after each period of use.

Observation: The floor drain within the garbage room and various floor drainage grates throughout the premises were clogged/blocked and likely not to drain surface water efficiently.
Corrective Action: These should now and routinely be cleaned.

Observation: The building water system should be protected from potential cross contamination sources.
Corrective Action: Potential sources should be identified e.g. water filters, ice makers, washing machines and corrective action taken to prevent risk of cross contamination. The Municipal Plumbing Inspector can advise and will issue permits for testable protective devices.

Observation: The garbage room was in need of cleaning, the floor drain was blocked and garbage was being stored in bag directly on the floor.
Corrective Action: The floor drain should be cleared and the garbage room routinely thoroughly cleaned. Storage of garbage should be in suitable covered containers.

Observation: Mice activity was noted in the salad bar area.
Corrective Action: This area should now be thoroughly cleaned and sealed to prevent further ingress of mice from sterile areas.

Corrective Action: This room should now be thoroughly cleaned and maintenance carried out to seal the area from pests. Additional lighting should also be installed for cleaning purposes. Redundant equipment should be removed from this area.

Observation: Exposed wooden surfaces within the Service Area and within Christine's Bar.
Corrective Action: Surfaces should be repaired/treated leaving a smooth, impermeable and cleanable surface.

Corrective Action: To ensure adequate drainage during cleaning or to prevent water contamination of food products the drain should be provided with a grate, flushed out and the raised collar removed to ensure grate is at floor level for effective drainage.

Observation: There is a damaged area of ceiling within the cleaners cupboard area. There is also evidence of mice activity.
Corrective Action: The ceiling should now be repaired leaving a smooth and cleanable surface.

Corrective Action: To assist with cleaning, the lighting in these areas should be assessed and enhanced.
