Observation: The floor in one of the walk in cooler is rough and rusted. There is visible grease build-up on the floor.
Corrective Action: The floor must be refinished with a smooth, non- absorbent and easily cleanable material. The frequency of cleaning/washing in this walk in cooler should be increased. Target completion date for the floor re-finishing- within 6 months from the date of this inspection.

Observation: The temperature logs are not being maintained regularly.
Corrective Action: The temperature logs must be maintained regularly. The dishwasher rinse temperature must be included in the daily monitoring and recording.

Comments:

General observation:
All the temperatures are meeting health requirements. The dishwasher is sanitizing at >82 Degree Celsius on the manifold.
