108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: The dishwasher is not sanitizing at >71 Degree Celsius temperature in the rinse cycle. The repairs has been done to the dishwasher and the rinse gauge has been replaced. However, at the time of this inspection the maximum recorded rinse temperature was 65 Degree Celsius.
Corrective Action: The dishwasher must be repaired and the reason of discrepancy between gauge reading and the water temperature reading should be investigated. The operator was provided with the thermal labels to verify the effectiveness of the repairs.
