Follow-up inspection conducted this date.
A temperature monitoring program has been implemented. Temperature logs are now present on every cooler and are complete and up to date.
A time control program has been implemented for the ice baths and the hotel has committed to installing mechanical refrigeration in this area.
Please note: to be considered acceptable, the mechanical refrigeration installed must be capable of maintaining food at 4 degrees Celsius or below. Operator will update the health department with the specifications of the work to be done in this regard. A follow up inspection is to be scheduled in three months time or upon request by the hotel.
