Observation: Food within the top-line food coolers were noted in excess of +4C. Many of the food containers do not seat well within the top-line frame allowing warm air in and cold air to escape. Food containers were also not fitted with lids.
Corrective Action: Potentially hazardous food should be stored at +4C or colder.
105  Critical Repeat Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s)
Observation: Raw potentially hazardous foods were being stored above other foods not intended for cooking.
Corrective Action: These types of food products must be stored on the lowest shelves and safe by position.
108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Sanitizer for cleaning and sanitizing food contact surfaces and wiping cloths was readily available for staff use.
Corrective Action: Staff culture regarding use of cleaning materials and sanitizer must now be improved.

Observation: Staff were witnessed placing glasses within the ice sink to wet the rims prior to sugaring.
Corrective Action: Glass should never be placed in the ice intended for consumption under any circumstances.

Observation: The beer cooler is dirty with mould growth on walls, floors, ceilings and equipment.
Corrective Action: This area should now and routinely be thoroughly cleaned and the hole in the floor leading to the cooler repaired.

Corrective Action: Ice sinks should be thoroughly cleaned and sanitized after each period of use.

Corrective Action: In line with good HACCP practices this should be routinely carried out.
