108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Dishwasher in food preparation area needs repair! Until repaired, all dishes and utensils must be Washed/Rinsed/Sanitized/Air Dried. All wiping cloths must be clean, restricted in use, and stored in approved sanitizing solution. Sanitizing solution (ie.100 ppm chlorine) with wiping cloths must be kept in a separate container, monitored with test strips and changed every 2 hours. Consider an automatic system for sanitizer or spray bottles with prepared sanitizer, .
113   Improper Sanitary Facilities
Observation: Handbasins must be kept clean and supplied with liquid soap and paper towels at all times the facility is in operation. Ensure bar area has handwashing available for the staff.

Critical Hazards addressed from previous inspection (11/07/03)are:
103. No food stored in beer cooler at time of inspection.
108.Glass washer in bar area has iodine sanitizer >12.5ppm residual at time of inspection. Dishwasher in food prep area was repaired and is again in need of repair - not operating at time of inspection, awaiting parts for repair.
120.Operators completed the FoodSafe course and were certified.

Inspection at 11:30pm and food preparation area had already closed for the night, so there was no food preparation at time of inspection.
-Food prep area and equipment clean and free of clutter - good!
-Hamburger thawing on lowest shelf in refrigerator - good!
-Refrigerators organized and temperatures below 4C with thermometers in place - good!
Handbasin in food prep area equipped with liquid soap and paper towels (on opposite wall) for handwashing - good
