Comments:

Follow up inspection conducted today to assess the dishwasher and one of the line coolers on the kitchen line. The dishwasher reaches 71C at the dish as required. The temperature sensor for the hot rinse has been replaced and is functioning correctly at the time of inspection.

The inside of the line cooler was running at satisfactory temperatures at time of inspection. However, enhanced monitoring should take place in this cooler to ensure that these temperatures can be maintained throughout the day. In addition, it is recommended that some measures are taken to provide sealing around the insert trays on the top of this cooler to ensure 4C is achieved throughout the day. This may also extend the life of the cooler until it is replaced.
