Observation: The delivery person leave the perishable food items at the room temperature. At the time of this inspection, 2 boxes of raw chicken were observed being stored at the room temperature. These boxes were delivered by the delivery person before the restaurant was open.
Corrective Action: The delivered perishable items must go into the cooler or the freezer immediately after delivery. Temperature and the quality of the food must be checked upon delivery.
116   Improper Construction / Maintenance of Establishment
Observation: The temperature gauge on the high temperature dishwasher is not accurate.
Corrective Action: Please repair/replace the temperature gauge and maintain a daily log of the dishwasher rinse temperature. See the manufacturer's instructions on the dishwasher for the required rinse temperature.

Comments:

The following items from the last inspection has been corrected:
1. The storage practices in the walk in freezer has improved. A constant monitoring is needed to ensure that the freezer remains well maintained.
2. The shelves has been designated for the raw meat storage and the signs has been provided on the each shelf. Some more work needed on the storage practices. Some cooked items are still being stored on the shelves meant for the raw meats.
3. The front front service counter has been refinished/polished.
4. The glass washer is sanitizing at more than 12.5 ppm iodine concentration.
5. The walk in freezer condensate drainage problem has not yet been repaired. According to the operator, the work order has been placed and it is taking more than usual because of the unavailability of the parts.
