Comments:
Follow up inspection. Discussed the results of this inspection with Alyssa Berard, assistant general manager of the restaurant.
The following items from the previous inspection report has been corrected:
- Both the mechanical glass washers are now providing > 12.5 ppm iodine in the rinse water.
- The tap on the hand washing station has now been repaired. Soap and paper towel provided on all the sinks in the kitchen.
- Three thermometers provided in the line cooler.
- The operator has started maintaining temperature logs.
- Probe type food thermometer available.
- Sanitizer spray bottles are labelled.
The operator is advised to develop a daily checklist for manager to ensure that these violation do not re occur.
