Observation: The temperature of the prep cooler closest to the stairs was measured at 5-8 degrees Celsius. This prep cooler is very overcrowded.
Corrective Action: Temperatures of coolers must be monitored regularly. Coolers should not be overstocked as this prevents air movement. Product was removed from cooler at time of inspection.
105  Critical Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s)
Observation: There is a build-up of ice in the walk-in freezer, particularly on the electrical outlet.
Corrective Action: The freezer requires defrosting.
108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: There is no measurable amount of sanitizer being dispensed from the sanitizer station. Sanitizer spray bottles not available for sanitizing food contact surfaces.
Corrective Action: Unit must be serviced to ensure that the proper amount of sanitizer (200 ppm Quat) is being dispensed. Ensure Quat spray bottles are available for use in the kitchen; wiping clothes used on cutting boards must be stored in a sanitizer solution.

Observation: There is a build-up of food debris on the floors in the walk-in cooler. Hard-to-reach wall areas (dishpit, behind shelves) have food/grease splashed.
Corrective Action: Cleaning is required in hard-to-reach areas of the kitchen.

Observation: Floor tiles are missing in the center of the downstairs prep area, this area cannot be properly cleaned; tiles missing in stair well.
Corrective Action: Missing tiles must be replaced.

Observation: There is a significant leak in the ceiling in the dry storage area.
Corrective Action: Leak must be repaired.

Comments:

Additional items noted at the time of inspection:
Handsinks are accessible and adequately stocked with soap and paper towel.
The insulation in the dry storage area has been covered, however a more permanent solution is required.
The exposed insulation in the ice machine has been removed - good.
The rinse temperature (sanitizing cycle) of the glasswasher is satisfactory.
