110   Repeat Food Not Protected - General
Observation: a)The sanitizer dispenser is providing the adequate concentration of sanitizer but the solution in the wiping cloth buckets is not showing any detectable sanitizer.b) Some food boxes are still being stored on the floor of the walk in freezer.
Corrective Action: a)The wiping clothes must be stored in the 200 ppm quat or 100 ppm bleach solution. b) All food must be stored 6 inches above the floor.

Comments:

Items corrected from the last routine inspection:
1. The dishwasher is sanitizing at >50 ppm bleach concentration. The operator to start maintaining daily sanitizer concentration logs both in the dishwasher and from the sanitizer dispenser.
2. The food safety and sanitation plan is available. The operator is advised to update this plan to make it more comprehensive.
3. Raw meats are being stored correctly.
Following items are not yet corrected but are in progress:
1. According to the operator, he is in the process of installing paper towel dispensers.
2. The sanitizer test strips have been ordered.
3. The temperature logs are being maintained.
