Observation: Ceiling tiles around the ventilation hood above the kettle are in need of cleaning.
Corrective Action: Clean ceiling tiles.

Observation: The shelving unit under the stairs (access by bar) is not smooth and easily cleanable.
Corrective Action: Replace existing shelf surfaces with shelving that can be easily cleaned.

Comments:

The following items were in compliance with the Regulation:
-All refrigeration temperatures met regulatory requirements.
-Hand washing sinks were accessible and supplied with soap/paper towels.
-All refrigeration units were equipped with thermometers.
-Temperature logs were up-to-date.
-Dishwasher achieved 78.7C during final rinse cycle.
-Quat sanitizing solutions measured 200ppm.
-Glasswasher measured 12.5ppm iodine during final rinse.
-There were no issues noted with food storage.
-Ventilation system was last cleaned January 2013.
-Backflow prevention device last tested January 2013.
-Sanitation was generally acceptable.
-No signs of pests were noted.
-Washrooms were clean and supplied.

Other comments:
New flooring was installed in the walk-in cooler last fall which was supposed to be similar to existing floor surfaces. However during inspection it was noted that the finished product is unlike the existing flooring and is trapping more grease and food debris. Operator has confirmed that follow-up is already underway regarding this matter.
