A summary of the violations found during the inspection are listed below.

110   Food Not Protected - General
Observation: Observed a food tray wrapped in a non food grade polythene (garbage bag).
Corrective Action: Food must be wrapped in a food grade material. Garbage bags are not suitable to wrap the food.
113   Improper Sanitary Facilities
Observation: Two hand stations close to the kitchen entrance has no paper towel available.
Corrective Action: A paper towel in a dispenser must be provided on these hand stations/sinks. Target completion - within 1 week from the date of this inspection.

Comments:

In compliance items:
1. All refrigeration temperatures except the line cooler inserts are below 5 Degree Celsius.
2. All freezing temperatures are below -18 Degree Celsius.
3. The high temperature dishwasher is sanitizing at > 71 Degree Celsius on the dishes.
4. The sanitizer spray bottles have >200 ppm quat concentration.
5. Both the glass washers are providing more than 50 ppm chlorine in the rinse cycle.
6. Food safe certified staff available.
7. No concerns identified with the food handling practices.
8. No signs of any pest infestation.
9. General maintenance of facility is satisfactory.

Recommendations: The ice machines are located outside of the main kitchen and near to the garbage removal/storage area. This area is open to the flies and any other potential pests.Although there are no visible signs of any pest infestation at the time of this inspection, the operator is advised to store the ice scoops in a closed container to eliminate the chances of getting contamination from the flying pests. The empty wine bottles being stored close to the ice machine must be properly washed, frequently removed, and kept covered to eliminate the possibility of them becoming a fruit fly infestation ground.

Note:
The food in the line cooler inserts is currently being flipped within 2 hours as a measure to deal with the warmer than 4 Degree Celsius food temperature in these inserts.
