Observation: Sanitizer bucket with the wiping clothes has no detectable sanitizer in it. The sanitizer dispensing unit is dispensing adequate concentration of sanitizer.
Corrective Action: Please ensure that the employees are using the correct dispensing unit to fill the bucket.

Comments:

All temperatures are meeting health requirements. Dishwasher is sanitizing at >82 Degree Celsius. Temperature logs are being maintained . The operator is advised to start maintaining a log for the dishwasher rinse temperatures.
