102  Critical Repeat Food Not Protected From Contamination - Micro
Observation: At the time of this inspection one of the food handler was observed cutting vegetables on the same cutting table that had raw shrimp on it. Raw meat was being stored on the top of the ready to eat foods in the upright fridge.
Corrective Action: Raw meats/sea food must be handled on a separate table designated for this purpose and it must be sanitized after use. Raw meats must be stored on the lower most shelves and away from any other foods.
108  Critical Repeat Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: a)None of the spray bottles have sanitizer in it. This suggests that the food contact surfaces are not being sanitized. The sanitizer dispenser is providing > 200 ppm quat solution. b) The wiping clothes are not being stored in the sanitizer solution.
Corrective Action: a)All the food contact surfaces must be sanitized with 200 ppm quat or 100 ppm bleach solution. Sanitizer bottles must be filled with the sanitizer and all the food contact counters must be sanitized regularly. b) The wiping clothes must be stored in the sanitizer solution.
110   Food Not Protected - General
Observation: a)The drink bottles are being stored in the ice cubes intended to use in the drinks. b) The containers with the chemicals are being stored with the food in the dry storage area.
Corrective Action: a)The Ice cubes intended to use as a food must not contaminated with any unsanitary surfaces. b) All the chemicals must be stored in a separate cabinet/room. This is a reoccurring violation and must be addressed to avoid a violation ticket.
116   Repeat Improper Construction / Maintenance of Establishment
Observation: a) The cooler with the glass door has rusted shelves in it. b) Most of the wooden shelves in the kitchen area have deteriorated to become a rough and absorbing surface.c) The wall behind the chest freezer by the janitorial sink has a hole in it.d) The floor and shelves in the dry storage room are filthy.e) Lids on the chest freezer are cracked and the insulation is exposed.
Corrective Action: a) The rusted shelves in the cooler must be painted/replaced. b) All the rough shelves must be replaced. Target completion date agreed with the operator is 30th April 2010. In the mean time a temporary vinyl cover will be provided on the these shelves.c) The hole in the wall must be repaired as soon as possible.d) Dry storage area is in need of thorough cleaning and organizing. This must be done in a week from this inspection and the regular cleaning frequency be increased for this area.e) Lids on the chest freezers must be repaired/replaced. Please be advised that this is a reoccurring violation and failing to address this problem may result in a violation ticket.

Observation: Test strips to measure sanitizer concentration are not available.
Corrective Action: Sanitizer measuring test strips must be provided (for bleach and quat). The dishwasher sanitizer concentration must be measured and recorded daily. Similarly, sanitizer levels from the sanitizer dispenser, spray bottles must be monitored regularly. The issue of not enough sanitizer in the sanitizer bottles has been brought to the operator's attention more than one time in the previous inspections. A regular monitor procedure must be established to avoid any future violations of the same kind.
