Observation: Several covers missing on kitchen ceiling lights.
Corrective Action: Ensure all kitchen ceiling lights are provided with shatterproof light covers.
505   Food premises maintained in a sanitary condition (Sec 17(1))
Observation: Some visible built-up of dirt/debris observed under and behind equipment and in hard-to reach areas.
Corrective Action: Ensure all areas of kitchen are maintained in a clean and sanitary manner on a regular basis. Clean dirt/debris under and behind equipment, on vent and fan covers, on shelving racks in walk-in cooler and refrigerators.

Comments:

Inspection conducted due to suspected foodborne illness complaint.
The following items noted (in compliance with Regulations):
- Wall-mounted liquid handsoap and paper towel dispensers provided at handwash stations.
- Quats Sanitizer in spray bottles provided for sanitizing food contact surfaces
- Dishwasher provides 100ppm chlorine in sanitizing rinse.
- Bar glasswasher provides 12.5ppm iodine in sanitizing rinse.
- Foodsafe certified staff on-site
- Dry storage room well organized.
- Ice scoop stored in s separate washable container, outside of ice machine.
- Cooked foods hot-holding above 65C
- Walk-in cooler temperature recorded 3C.
- Line cooler refrigeration temperatures recorded 4C, or colder.
- Walk-in freezer temperature recorded -18C
- Shellfish tags maintained a minimum of 3 months.
- Reviewed shellfish safety recommendations with operator (delivery, storage and cooking procedures). No concerns identified.
- Staff knowledgeable of safe food handling practices.
