Observation: Light not working in produce refrigerator
Corrective Action: Replace light in produce fridge.

Comments:

Areas noted at time of inspection:

- Refrigeration temperatures recorded 4C, or below = good.
- Freezer temperatures recorded -16C, or below = good.
- Liquid handsoap and paper towels available at handwash stations = good.
- Clean, wiping cloths used with Quats sanitizing spray, for wiping food contact surfaces = good.
- Food that requires reheating (soups, sauces, etc) are brought to boiling temperature on stove, prior to transfer to hot-holding unit. (Ensure foods to be reheated reach an internal temperature of 74C/165F minimum, or brought to boiling and stirred for several minutes. Hold hot food at temperatures above 60C at all times - monitor with probe thermometer).
- Dishwasher not working at time of inspection, due to plumbing repairs. Ensure dishwasher sanitizing rinse is monitored and recorded daily. Ensure dishwasher sanitizing rinse maintains 100ppm chlorine concentration.
- Ensure Temperature logs are maintained on a daily basis (all fridges, freezers, and hot-holding units).
- All foods in cooler units were covered, labelled and dated = good.
- Discussed raw shellfish advisory with operator - Left advisory information. Facility does not sell raw oysters or other raw seafoods at this time.
- Due to current Boil Water advisory, facility is not using tap water, or ice, for consumption. Once BWA is lifted, be sure drain, wash and sanitize inside of ice machine (after discarding first full bin of new ice). Boil Water Notice guidelines left with operator.
- Reviewed Food Safety Plans with operator.
