Observation: The caulking material on the tiles-wall junction in the dishwashing area has become moldy.
Corrective Action: Remove the moldy material and reapply the sealant to provide smooth and easily cleanable surface.

Observation: Food containers stored on the floor in the walk in cooler.
Corrective Action: Store any food containers minimum 6 inches off the floor for the ease of cleaning.

Observation: Inadequate lighting in the dry storage area and in the front bar.
Corrective Action: Replace the broken bulb in the dry storage area. More lighting is required in the bar area for the ease of cleaning.

Observation: Broom hanging on the wall near dough mixer. Reoccurring violation.
Corrective Action: Remove broom/mop hangers from the wall near the mixer. Do not hang any dirty items over the mixer.
509   Items not required in food premise operation are not stored on the premise (Sec 18)
Observation: An old broken fridge is being kept in the storage area.
Corrective Action: Any items not required for the food service operation must be removed from the premises.
604   Adequate handwashing stations at convenient locations are available for employees (Sec 21 (4))
Observation: The hand washing station in the kitchen has no paper towel.
Corrective Action: Restock the paper towel dispenser.

Comments:

Routine inspection. Discussed the results of this inspection with operator Kike Redondo.
In compliance items:
- Refrigeration temperatures are 4 degree Celsius or below.
- Freezer temperatures are -18 degree Celsius of below.
- High temperature dishwasher is reaching 71 degree Celsius on the dishes.
- Bar glass washer is providing >12.5 ppm iodine in the rinse cycle.
- No signs of pest infestation. A pest control program in place by the building owner.
- Operating permit posted.

Note: Operator to make sure that the staff washroom is not used to hang the clean staff uniforms.
