Comments:
The following items from the previous inspection has now been corrected.
- The bar glass washer is providing >50 ppm chlorine in the rinse cycle.
- The high temperature dishwasher in the kitchen is providing >82 degree Celsius on the manifold. However, the temperature on the dishes is inconsistent during subsequent cycles. The operator to contact the dishwasher technician to investigate the reasons. A follow inspection will be done in two days to verify that the dishwasher is able to maintain 71 degree Celsius on the dishes all the times.
- The records for critical cook temperatures and times for the sous vide cooking are now being maintained.
