A summary of the violations found during the inspection are listed below.

Observation: The operator has not yet made any plan to address the issue of inadequate amount of hot water supply. At the time of this inspection, the operator expressed her unwillingness to cooperate on this issue.
Corrective Action: The operator verbally warned that failing to provide adequate amount of hot water for proper hand washing and sanitation will result in further enforcement action from this office. In order to avoid further enforcement action,the operator must provide a plan to address this issue within next 4 days. In the meantime, the operator must ensure that food contact surfaces are washed, rinsed and sanitized with water above 45 degree Celsius. As a temporary solution, washing times can be carefully chosen to avoid running out of hot water and/or water can be manually heated to meat the cleaning needs.

Observation: Water leaks on the sprayer on the double sink. Uncorrected from previous inspection.
Corrective Action: Repair the water leaks on the sprayer on the double sink.

Observation: The faucet on the sink needs to be secured. Uncorrected from previous inspection.
Corrective Action: Secure the faucet on the hand sink.

Observation: Water is continuously running on one of faucets on the mop sink. Uncorrected from previous inspection.
Corrective Action: Repair the faucet on the mop sink.
302   One staff has Foodsafe in Operators absence (Sec 10 (2))
Observation: No food handlers working at the time of this inspection has foodsafe training. This is an uncorrected violation from the previous inspections.
Corrective Action: There must be one person with foodsafe level 1 training working on site. Failing to provide adequately trained staff can result in $230 violation ticket.
506  Critical Equipment/utensils are maintained in a sanitary condition (Sec 17(1a))
Observation: Hot water is still not made available on the double sink. The operator advises that they fill up the double sink with a bucket when sanitizing the reusable equipment and food contact surfaces. This premises does not have adequate amount of hot water supply. Despite EHO's request, no progress has been made to connect the sprayer on the double sink to the hot water supply.
Corrective Action: Hot water must be provided directly on the double sink sprayer to wash, rinse and sanitize the reusable food contact surfaces. This remains a critical uncorrected violation. The operator is verbally warned by the EHO that failing to correct this violation with in next 4 days will result in an enforcement action from VCH. In the meantime some temporary arrangements are required to ensure that food contact surfaces are maintained in sanitary condition.

Follow up inspection.

None of the violations from the previous routine inspection has been corrected.

The operator must provide a plan in writing to correct all the violations on 14th March, 2014 routine inspection within 4 days, failing to provide an appropriate course of action to address these issues will result in an enforcement action by the EHO.

In the meantime, the operator must ensure that the food contact surfaces are cleaned and sanitized as per Section 4 of Canadian Food Retail and Food Services Code. An electronic copy of the three compartment sink method for manual ware washing is being sent to the operator along with this inspection report via email.
