Observation: Potentially hazardous foods (meat, cheese) on the buffet line were not maintained < 4C.
Corrective Action: Food must be kept < 4C during display.

Observation: There are several bags of dried food products stored directly on the floor in the dry storage area. Food boxes and tray are stored directly on the floor in the walk-in freezer.
Corrective Action: All food products must be stored 6 inches off of the floor, this will facilitate cleaning and reduce the risk of contamination.

Observation: Food on the breakfast buffet is placed in the cooler and re-used the following day.
Corrective Action: All food that is served to guests or susceptible to contamination (food on the buffet) is not to be reserved.

Observation: The ceiling in the dry storage area is beginning to fall down exposing insulation.
Corrective Action: The ceiling must be properly repaired.
