108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: a)The dishwasher does not have any measurable concentration of sanitizer in the rinse cycle. b) The wiping clothes are not being stored in the sanitizer solution.
Corrective Action: a)Please get the dishwasher fixed to get >50 ppm chlorine concentration in the final rinse cycle. In the meantime all dishes must be manually sanitized in 100 ppm bleach solution.The dishwasher must be monitored for the sanitizer concentrations and daily logs maintained. c) The wiping clothes must be stored in the sanitizer solution in between the uses.
109  Critical Other (Specify)
Observation: a)Temperature logs are not being maintained. b) Sanitizer test strips are not available to monitor the sanitizer concentrations.
Corrective Action: a)Temperature logs must be maintained for all the refrigeration, hot holding and freezing equipment. b) Sanitizer test strips must be provided to ensure that the correct sanitizer concentrations are being used on the food contact surfaces. A daily log must be maintained and the sanitizer monitoring should be made a part of your written sanitation plan.
110   Food Not Protected - General
Observation: a) The upright fridge and the walk in cooler have no designated spot/spots for storing raw meats. Some small containers of raw meat/sea food are stored above other foods. b) Some food containers stored on the floor in the walk in freezer.
Corrective Action: a)All raw meats must have a designated storage spot preferably on the lowermost shelf and away from any other foods to avoid any potential contamination. b)All food containers must be stored at least 6 inches above the floor to facilitate cleaning and the avoid contamination.
113   Improper Sanitary Facilities
Observation: Paper towels dispensers are not available on the hand washing stations on the front bar counter, sushi counter and the server's counter.
Corrective Action: Paper towel dispensers needs to be provided on all the hand washing stations.
122  Critical Inadequate Food Safety Plan
Observation: A Food Safety Plan has not been completed and approved for this facility. A Food Safety Plan is required under Section 23 of the Food Premises Regulation..
Corrective Action: A Food Safety Plan must be submitted by 1st Dec, 2009.
130   Inadequate Sanitation Plan
Observation: A Sanitation Plan has not been completed and approved for this facility. A Sanitation Plan is required under Section 24 of the Food Premises Regulation.
