Observation: Proper cooling of potentially hazardous foods is not occurring.
Corrective Action: Rice and other foods being cooled must be placed in shallow containers to facilitate rapid cooling of food. Monitor temperatures to ensure cooling is occurring.
105  Critical Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s)
Observation: Refrigeration temperatures are not adequate to maintain food temperatures below 4 degrees Celsius.
Corrective Action: Cooler was adjusted at the time of inspection. Cooler temperatures must be monitored and recorded at least twice daily to ensure that the temperature of potentially hazardous foods can be maintained less than 4 degrees Celsius.
106  Critical Inadequate Hot Holding Temperature of Potentially Hazardous Food(s)
Observation: Potentially hazardous foods stored hot are not kept at or above 60ºC /140ºF during hot holding.
Corrective Action: Ensure that all food in the hot holding unit is maintained at proper temperatures. Keep lids on food during slow periods; check temperature of food prior to placing in the hot holding unit; check temperature periodically throughout the day.
113   Improper Sanitary Facilities
Observation: There are no paper towels available for drying hands - cloth towels are being used.
Corrective Action: Paper towels MUST be available at the handsink.
