Comments:

The following observations were made:
1. All parts have now been installed for the line coolers and temperatures were acceptable at time of inspection. Recommend keeping a probe thermometer in one of the inserts at all times for continuous monitoring of temperatures. Operator indicated that one of the upright coolers had broken and parts are on order. Unit is not currently being used for food storage.
2. All metal inserts are now in place for the salad station.
3. The glass washer was tested and did not initially read an adequate concentration of sanitizing solution. Upon further inspection, it was determined that the stock sanitizing solution was not strong enough - likely due to an expired shelf-life. Recommend writing the date on each new bottle so this can be prevented. Also, avoid mixing any remaining old solution with new solution. Finally, ensure that staff are using test strips every day to confirm that an adequate concentration of chlorine is being delivered. This must be recorded on a daily log sheet and will be reviewed during the next inspection.
4. Furry mats in the dry storage room have been removed.
5. Caulking has been applied in all required areas.
6. Flooring in dry storage area has been re-sealed.

Outstanding items:
1. Stainless steel tables are on order for the coffee bar and will be used to replace the existing wood counter.
2. The rotting wood at the bar/ice machine pass through needs to be repaired.
3. Light covers are on order.
